I do not have a patent for my invention yet, but I want to talk to a company about selling my product. Should I make them sign something to protect my product, like a non-disclosure agreement or something like that?

Yes most definitely but remember once you start talking to them it starts the one year time clock for the filing regardless of what disclosures you have them sign. Easiest to just file a provisional application now.

You should always have everybody, aside from the inventors and your attorney, sign an NDA to protect yourself from public disclosure of your invention.
