Employment started 03/2010, now employer demands all employees sign a document, if someone refuses, they will be removed from the schedule. Is this legal?

It depends on the document and whether it is legal. An employer can change the terms of an at-will employee's employment if it provides notice to the employee of the change. This would include requiring current employees to sign an arbitration agreement, for example.
